The Color Test: Natural fresh bitter gourd has a natural green color - medium to light green with natural variations. Some areas may be slightly lighter or darker. Chemically preserved bitter gourd has unnatural dark green color, almost bluish-green or overly vibrant green. The color is too intense and uniform. 2. The Firmness and Texture Test: Feel the bitter gourd. Natural fresh bitter gourd is firm throughout with consistent texture. Press it gently. Chemically treated or injected bitter gourd has soft spots, uneven firmness, or areas that feel spongy. These soft spots indicate injection points or chemical breakdown of tissue. 3. The Color Uniformity Test: Examine the entire gourd. Natural bitter gourds have slight color variations - the ridge areas might be darker, some parts lighter. This is normal. Artificially dyed bitter gourds have suspiciously uniform, consistent dark green color throughout with no natural variation. It looks "too perfect." 4. The Insect Damage Check (Paradoxical Test): Look for small holes, minor insect bites, or tiny imperfections on the surface. Natural bitter gourd with minimal pesticide will have some signs of insect activity - this is actually a good sign. Perfectly pristine, flawless bitter gourds with zero damage indicate excessive pesticide use. Insects won't touch heavily treated vegetables. 5. The Age Test: Store at room temperature and observe. Natural bitter gourd will start yellowing and wilting within 2-3 days. Chemically preserved bitter gourd stays fresh, green, and firm for 5-7+ days unnaturally long. This extended shelf life indicates chemical preservatives.
